Jerk seasoning is a style of cooking native to Jamaica. Pork or chicken are traditionally cooked in this manner – the meat is rubbed with a hot mixture of spices, and then barbecued over aromatic wood or charcoal. The spice mixture includes allspice and Scotch bonnet peppers, which are some of the hottest peppers in the world, as well as cloves, cinnamon, nutmeg, garlic and various other ingredients.
